On Friday my husband entered us at our local radio station to win tickets to a Newsboys concert and we won! So, we were excited to be going to see one of our favorites on Saturday. So excited I guess the we forgot sunscreen. A mistake that will never happen again! The concert was in a park and we got tickets to an air show as well, so we were there all day…in the sun. I love the sun but not when it burns me. Like it does every summer because I am pretty darn white. I don’t tan, I don’t even think it’s possible for me. I burn, peel and turn white again. Oh well…So we sat outside in the lovely at the time sun for 7-8 hrs and here is the result.
Did I mention that I have major raccoon eyes?
The picture definitely doesn’t show how bad it really is, but as you can see the tops of my arms got pretty toasty and the underneath is still that blinding white. My shoulders got it too and so did my face and the top of my lower legs. I was wearing leggings so it’s quite humorous to see.
The good news is, we love the Newsboys so it was worth it. It really is starting to feel better today after all of the aloe that we have put on ourselves. (My husband got it pretty bad too.) We had a lot of fun at the concert and thankfully at the time the sunburn hadn’t really set in yet, so we weren’t feeling it until the next morning.
We sat really close to the “runway” I guess it’s called, (I’m not really sure) so we got some great photos.
Lesson learned the hard way…

It’s wedding season! I’m so glad to be done with all of the crazy wedding planning that I had to do last year for my wedding. Now, I can just enjoy other people’s weddings.

Chicken Salad is so easy to make and so delicious! I came up with my own recipe a few summers ago when my husband and I went camping with friends and needed a quick and easy (yet tasty) meal for when we arrived at the campsite. My friend’s husband was very skeptical because he usually doesn’t care too much for food made with dressings (like mayo). He tried it and loved it! Every time they came to visit I made this every time because we all enjoyed it so much! I even got my family to love it…which can be a hard task at times. So, here it is. Very general but great for tweaking to make it your own!
2 Boneless Skinless Chicken Breasts, cooked and cubed
1 lg. apple (any variety) or 2 small apples cut up
A good handful of grapes, halved or quartered
2 stalks of celery, chopped
A handful of dried cranberries (probably 1/2 – 1 cup)
Mayo, as much as you desire
Mix everything together in a large bowl and refrigerate until chilled. Serve on bread or crackers. Enjoy!

I really, really like popcorn. Especially made with my Whirley Pop on the stove. I think I have made my husband sick of it with as much as I like it. :) Plus I like when he makes it…I always burn it. So, I took a little popcorn break…until I found this recipe for Caramel Corn from Passionate Homemaking! Mmmmm!!! So good! And it’s a healthier alternative to using corn syrup. I love Passionate Homemaking’s recipes. I have not tried one that didn’t turn out wonderfully!
So, if you love popcorn like I do…you should try this recipe for Caramel Corn! Oh, and don’t forget the baking soda. I almost tried it without because I just ran out, and am so glad that I didn’t. It made a huge difference in the texture of the caramel. Much more fluffy and easy to pour!

We also purchased some fresh lettuce for salads and sugar snap peas for snacking.
What did we do with those strawberries, you ask? We made Strawberry Shortcake! And it was delicious!
Here’s my kind of made up recipe….
2 1/4 cups whole wheat flour
1 cup milk
5 Tbsp. melted butter
1 Tbsp. baking powder
1/4 cup sugar
*Mix all ingredients together and bake in 350 degree oven for 12-15 minutes. Makes 10-12 biscuits.
While the shortcakes are baking, mash up some strawberries, add a little bit of sugar and a splash of orange juice . Taste and add more if necessary. Place in the fridge to keep cool. Make some homemade whipped cream by beating whipping cream with some sugar and vanilla (about 5 mins on high). Taste about halfway through and add more sugar if necessary. I just guess and it always turns out just fine. When the biscuits are done baking, remove from oven and while still warm split in half and top with strawberry mixture and whipped cream. Enjoy!
This recipe worked really well for us! It was simple and so tasty! We will surely be enjoying this again soon!
Going to the Farmer’s Market has been one of my favorite summer activities….along with going to the beach!

Next up on my search for great Father’s Day gifts is Red Leaf. Red Leaf offers hand crafted soaps, lotions, bubble bath & gift sets, and they look amazing! I love freebies4mom.com. I always find great deals there and have gotten lots of free samples and even some bigger freebies. For Christmas last year, I got 50 free photo cards with a discount that I found there. I didn’t even pay for shipping. We also got my in-laws a photo calendar for free using a discount code that I found there. No shipping on that either. Freebies4mom has definitely saved me some money on some great products! So, you can imagine my excitement to find a discount code for 3 free Father’s Day cards from Shutterfly. All I had to pay was $.99 shipping with the code CARDS4DAD! You can barely buy one card for that price. My husband and I LOVE pictures. We love to capture memories of everything that we do. So these photo cards were just perfect for us! Here is one that I got for my dad using my favorite photo of us at my wedding.
Sorry the photos aren’t great. They don’t really show the quality of the cards. I was SO happy when I got them in the mail today. The quality is great and I would order these again. I think the original price is $1.99 a card and it would be worth it to me to pay that to have a personalized card.
